Ross added, “I have been fishing the Forth for almost 20 years now. My wife and I started the local delivery service during the Covid lockdowns, when the markets in Spain and Asia closed virtually overnight. We have built a great clientele over the past few years, and we now offer a wide range of seafood products including live lobsters, and langoustines, whelks, edible crabs, and velvet crabs, to restaurants across Fife and Edinburgh. It’s great to see the restaurants utilising the seafood that would usually go abroad, such as whelks and velvet crabs, on their menus nowadays. In season, we provide line-caught mackerel and frozen octopus is available too, ensuring our customers have access to high-quality seafood throughout the year. Currently, we are looking into new, sustainable methods of catching scallops, which I’m certain will prove very popular with our customers. Virtually all scallops are currently caught using dredging, which is known to damage the seafloor. This new method utilises lights to attract the scallops into creels, which is totally new and innovative.”
